Baby Chistening

My friend Stacey's little baba Lucas was christened a few weeks ago, and these are the cupcakes Stacey and I decorated for the tea after the service!

As the weekend's weather was so grim, we stayed in for most of the weekend and didn't venture into the city to partake in the Jubilee festivities!

To make myself feel a bit more patriotic, I baked these cupcakes!

Lemon Meringue Pies


After seeing this recipe over on Loryn Loves, I decided to give it a go and make a Lemon Meringue pie for The Boyf and the rest of the firemen as they were working most of Easter Weekend. Went down a treat it did, and was so easy to make! Also made a couple smaller ones in GU pots for my friend and I (couldn't miss out could we!!)

Domestic Sluttery:Ystervarkies!

I have just seen this recipe on Domestic Sluttery and cannot wait to get home to make them! I used to eat them all the time growing up in South Africa. They originate from Australia and are called Lamingtons there, but back home we call them Ystervarkies, which translated into English means porcupines.

Peppermint Crisp Tart Recipe



My most favourite South African dessert EVER!! So easy to make and hardly takes any time!



2 x Peppermint Crisp chocolates
1 x tin Caramel Treat
1 x pack Tennis Biscuits
250ml Double Cream





  • First Layer: Crush the tennis biscuits, mix with some butter and add to dish to make a solid base
  • Second Layer: Whip 250ml double cream until thick, add tin of Caramel Treat and mix. Add 1 x grated peppermint crisp chocolate. Pour onto biscuit base.



  •  Add another layer of tennis biscuits (I didnt mix this layer with butter)
  •  Add top Caramel Treat Layer

  • Sprinkle with pieces of peppermint crisp chocolate and put it into the fridge to set. I normally leave mine overnight.

Cheesecake Brownies

This is a recipe I got from Domestic Sluttery, so easy and SOOO delicious!


Ingredients:

Brownie

170g chocolate
3 eggs
100g butter
200g sugar
100g plain flour
1 tbsp cocoa powder
pinch of salt
1tsp vanilla essence
100g chocolate chips

Cheesecake

200g ricotta
1 egg yolk
75g sugar
vanilla essence

Preheat oven to 180 degrees.

Melt the chocolate and butter together, until smooth


Beat in the sugar and the eggs

Sift in the flour and cocoa powder

Add a pinch of salt

A teaspoon of vanilla essence

All the chocolate chips and mix till smooth. Pour into a baking tray lined with tin foil and lightly greased.

In a seperate bowl, add all cheesecake ingredients and mix till smooth.

Add the cheesecake mixture to the brownie mixture and swirl to create a marble effect. Whack in the oven for about 35 minutes.

Leave to cool and then cut into squares.


  Unfortuntaely they all got eaten before I could get a photo of them cut up. They were so delicious though, we ate them as they are and also warmed them up served with custard. Totals delish.

Beach Theme Cupcakes

I recently went to a friend's hen party, which was a Summer/Beach theme! We all had to bring a dish or snack to contribute towards the first part of the party which was held at the bride's house. I decided to make some cupcakes to suit the theme. I made vanilla cupcakes with strawberry flavoured icing. This is how they turned out...









I made the 'water' with dessicated coconut and blue food colouring, and then I created the 'sand' from crushed nice biscuits. They were yum!

Hello Kitty Happiness!

I love Hello Kitty. And I love cupcakes.

I have never used fondant when decorating cakes or cupcakes, but am very tempted to give it a go just so I can make Hello Kitty cupcakes!
